Greek Tomato + Cucumber Salad

This salad is so crisp and fresh!! This makes a perfect addition to any meal or even a great snack all on it's own!! Jump to recipe here

There are a million versions of this recipe* and let's be honest it's a fan favorite for a reason. You know my goal is to make life SIMPLE ~ so you know I'm not going to give you something super complicated or something that takes a long time to make!!

Seriously it just takes 10 minutes! It's so easy!!


Greek Tomato + Cucumber Salad

What you need:

  • 2 Tomatoes - coarsely chopped

  • 1 Large cucumber ~ chopped

  • 1/2 cup green pepper ~ coarsely chopped

  • 1/2 cup red onion ~ sliced

  • 1/2 cup feta cheese

  • 1/4 cup black olives

  • 1/4 cup kalamata olives

  • 1/2 cup of your favorite Greek vinagrette

  • 1/2 tsp lemon zest

How to make it:

Guys... it's legit ONE step!!

  1. Combine all ingredients in large bowl

Seriously that's it!! Just combine then serve and enjoy!


Note:

One very important thing to keep in mind is that this recipe is super easy to change up to your tastes!! I don't love raw onions or green peppers - I'm totally leaving those out as well as the lemon zest ~ not because I don't like it, but because I know myself well enough to know I won't ever have it on hand. ;)
